Festive Sandwich Cake

  • 2 tins smoked vendace or perch or roach
  • 400 g regular cream cheese
  • 1 onion, finely chopped
  • Garlic
  • Fresh thyme, finely cut
  • Mustard
  • Freshly ground black pepper, 1/3 fresh chili, finely chopped
  • 1 loaf of malted bread

Slice the loaf lengthwise into thin slices. Grind the fish into coarse paste in a food processor. Add the other ingredients and mix. Check the flavour. Spread fish paste on the bread slices and form them into a cake. Let the cake stand in the fridge for 24 hours before cutting into servings. Decorate with lettuce leaves and small fish.
