Fish from the clean waters of Northeast Finland
Kuusamo and Posio are famous for their great water systems where the water is clean and there is plenty of fish. These waters are the home of the renowned "Kitkan viisas," a small and tasty vendace called "the Sage of Lake Kitkajärvi." The story tells that it was given this name during the Russian revolution, when some people from this region left to Russia to take part in building the socialist ideal state. The small fish was named as The Sage of Lake Kitkajärvi, because it was smart enough not to go, even though it could have swum down the rivers that run to the east and cross the border from there.
Another explanation for the nickname comes from the fact that this small and quick fish is sometimes hard to catch. Wherever the truth lies, the fish itself is still delicious cooked in many different ways.
