Lake Kuusamojärvi Vendace and Potatoes
- Freshly caught and cleaned Kitkan Viisas vendace
- Season’s potatoes, either new potatoes or unpeeled wedge potatoes
- Onions (shallots)
- Sea salt (Freshly ground white pepper)
- Pour some water into a pot and bring it to the boil. Add potatoes and cleaned fresh vendace to the pot so that both will be cooked at the same time. Make a sauce from onions and butter: slice the onions, place them in a pan and let them soften in butter. Take some water from the pot and add it to the pan to make a sauce. Pour the remaining water out of the pot and serve the fish and potatoes with warm butter and onion sauce. Serve with fresh rye bread.
